Since its foundation, Ospelt has developed into a leading manufacturer and partner for meat processing, delicatessen production and system catering. The company supplies not only the regional market but also international customers, including leading brands in the food industry.
With its focus on quality, traceability, sustainability and food safety, Ospelt combines traditional craftsmanship with state-of-the-art technology. In the wake of increasing digitalisation, the company decided early on to introduce an integrated SAP-based industry solution – to digitally control the entire value chain from procurement and production to delivery.
The implementation of the SAP myMEAT Food Solution was a key strategic project that laid the foundation for an integrated, process-driven production and logistics environment.
Scope of services & tasks
As part of the project, I took on the role of sub-project manager and lead consultant for the design, implementation and optimisation of production and logistics processes. The aim was to introduce an integrated SAP solution based on the myMEAT Food Solution, which is specifically tailored to the requirements of meat and food processing.
Core tasks:
- Introduction of SAP PP (Production Planning) and the myMEAT Food Solution
- Creation of the Business Blueprint (BBP) and template concept for the PP, MM, WM (SD) modules
- Conducting a process and GAP analysis for sales, production and logistics
- Reengineering existing logistics processes for integration into the SAP system landscape
- Definition and introduction of MRP planning strategies (material requirements planning)
- Add-on specification and implementation for the PP and MM modules
- Development and introduction of specific industry add-ons:
- DPS – Disassembly Planning System (Zerlegeplanung)
- DGS – Disassembly Goods System (traceability and material flow)
- DGC – Disassembly Goods Control (process control and quality)
- Add-on specifications and integration for scales, barcode and scanner systems
- Development and implementation of weighing strategies for process automation
- Complex process requirements in batch and cutting production
- High requirements for traceability and quality assurance
- Integration of scanner and weighing systems into real-time processes
- Standardisation of different workflows between production, warehousing and distribution
- Adaptation of standard SAP processes to industry-specific procedures (meat processing)
- Minimisation of data inconsistencies in material and batch postings
- Introduction of an integrated production and logistics platform based on SAP myMEAT
- Development of an integrated process model from order to delivery
- Add-on integration (DPS, DGS, DGC) for digitising cutting and mixing processes
- Real-time integration of weighing stations and scanning solutions into the SAP process chain
- Development of a customised MRP tool for production planning and control
- Definition of a rollout template for additional locations
- Intensive key user training and process documentation
- End-to-end digitalisation of meat processing based on SAP
- Greater transparency and traceability along the entire value chain
